Inspirational Dinner?

So - do you ever get inspired by your cooking? Or, cheered by what you are cooking? I had that experience this evening. I made an old favorite - tomato soup, and veggie paninis (or California Grilled Veggie Sandwich). Both recipes I've gotten from dear friends across this land! The colors, the preparation....the aromas....it fed my soul way before it fed my stomach! Of course, I had to grab my camera!






I used my panini press as a grill for the bread and veggies. My kids ate the soup, and ate the contents of the paninis separately (like a veggie salad with bread on the side lol) but it satisfied the whole family - especially my husband who can be most picky, especially with vegetables. You don't even miss the meat! A great Lenten (or anytime!) meal.

It just felt good to prepare, cook, and devour. I felt incredible blessed by the produce this earth produces and thankful to a great God. Perfect for on a dreary, rainy, day.

It's the simple things!
