Anyhoo! GEAUX SAINTS!!!
We still are currently enjoying some Superbowl fare! I made a few items for my Tupperware party (aptly called "TupperBowl 2010" lol) that we then carried over to the viewing of the game now. So without further adieu:
Cool Veggie Pizza (a Pampered Chef fav of mine!)
- 1 (10 ounce) can refrigerated crescent roll dough (you can get the lowfat kind!)
- 1 (8 ounce) package cream cheese, softened (to save on calories, use lowfat or fat free)
- 1 tablespoon mayonnaise (you can also use light)
- 1 teaspoon dried dill weed
- all types of chopped veggies - mushrooms, tomatoes, cucumbers, peppers, onion, zucchini...etc - You can pick your toppings!!
- In a lightly greased 9x13 inch pan or 13 inch round pizza stone, arrange the crescent roll dough in a single layer. Pinch together the edges of the dough. Bake for 12 minutes, or until it becomes a golden brown crust. Remove the crust from the oven and allow it to cool.
- In a medium bowl, mix together the cream cheese, mayonnaise and dill. Evenly spread the cream cheese mixture on the crust. Sprinkle toppings on top of the cream cheese spread. Refrigerate for 30 minutes to allow the spread to thicken.
- Cut the chilled pizza into wedges or squares with a pizza cutter to serve.
Queso Dip (I like to call this Michelle D's Famous EASY Dip!)
1 jar of your favorite brand of queso dip (or homemade can be great!)
1/2 cup of your favorite salsa - DRAINED (homemade or store brand)
1 can refried beans
1/4 cup sour cream (you can go lowfat here).
Heat up...stir together....serve on whole grain chips....YUM!!!!!!!!!!!!!! SCORE!! So easy, its a crime!
And, that is dinner tonight as we watch the commercials (er...GAME). Can't wait to peruse the other yummy recipes I'm seeing...
